Seafood Casserole

Ingredients:

4 tbsps Knife Classic Olive Oil
80g onion chopped
2 cloves garlic
20g Chorizo sausage, diced
80ml white wine
1 can canned tomato
5 pcs prawn, peel with tails intact
1 pc squid, remove bone and cut into rings
100g cod, cut into chunks
4 pcs mussels
1 tbsp Italian parsley, chopped
Some lemon juice
Pinch of salt and pepper

 

Method:

1. Season the seafood with some salt, pepper and lemon juice.
2. Heat 2 tbsps of Knife Classic Olive Oil. Saute onion and garlic for 6 minutes over medium heat.
3. Add chorizo and saute for 2 minutes.
4. Switch to high heat. Add white wine to cook for a while. Then add tomato to cook for 10 minutes.
5. Heat 2 tbsps of Knife Classic Olive Oil in another pan. Stir-fry seafood until medium rare.
6. Put seafood into tomato mixture. Cook for a while until done. Add parsley. Season to taste with salt and pepper.
